Recipe for your pallet - Chicken fajita taco salad
This is one of my favorites lately.
You can buy pre-cooked fajita/lime flavored chicken from costco (full circle brand and next to foster farms pre-cooked chicken).
In a bowl add:
Some chopped up chicken strips
lettuce
grated cheese
diced tomato
some crumpled tortilla chips
some california french dressing
sprinkle ground cayenne pepper onto dressing.
toss and eat!
Notes:
-If chicken is too wet from being pre-frozen squeeze some moisure out in paper towel
-If you cant deal with spicey food, loose the cayenne
-I prefer romaine heart lettuce, but you can use iceberg too
-I think santita tortilla chips are best, if they sell in your area
-To use less dressing and evenly coat the contents (and not have to wash the bowl), forget using a bowl, take produce bags from grocery store,place contents in bag, create a big air bubble in the bag and twist it closed, lightly toss salad in the bubble bag, dump on plate, and throw away the bag (I do this for all salads)
-You can also add in red bell pepper and other mexican food type ingredients to taste
Tip:
Making large portions to keep in fridge is not good, chips/lettuce will get soggy. This is another reason I use the produce bag, with pre-cut cleaned lettuce, you can make a meal in 5 minutes by cutting the chicken, dicing a tomato, and thowing all the ingredients into a bag with an easy clean up!
