If you really think it's a horrible workout, then you don't know much about lifting. There are some big names that support the 5x5 program for both size and strength gains, people who have forgotten more than you or I will ever know about training.
If the 5x5 didn't work for you, you didn't do it right.
If you like the 6 day a week workout then go for it, especially if you're continuing to gain from it.
I have a hard time believing that you'll get the type of gain you want, be it hypertrophy or strength, when you lift 6 times a week and run cardio another three times. Especially if you're only squatting one out of those 6 days...
With that type of work load, I don't think 4000 calories a day would cut it to reach a 20lbs gain. The keys to gaining are intensity and rest (along with eating everything you can wrap your teeth around), whether you're a power lifter or a body builder.
